Sweet Treats!!

Mia's Christening.

Almost a year to the day of my baby girl's Christening and thought I'd share some of the delicious desserts we made for the celebration as we had no end of comments about them!

I've seen a lot of people ask on Mummy forums & pages about Christenings and what to do after the service and food ideas so here are some simple but yummy ideas!

The venue did some buffet food for us but we wanted to do the sweets along side a cake I had made by the very talented Sara at "Sara's House of Cakes".

I'd just discovered Pinterest which is amazing for ideas for pretty much everything and I began searching for pink food to go with our pink theme and came across some great inspiration! So these are my versions and recipes of what we went with.
First up, Mini Pink Raspberry Cheesecakes!

For these you will need;
  • 300g Soft Cheese
  • 350ml Double Cream
  • Vanilla Essence
  • 150-200g Icing Sugar
  • 1 tbsp. Gelatine mixed with a little hot water.
  • 2 tins of mixed fruit drained (I used raspberries to give the pink colour)
Base - Digestive Biscuits and melted butter.

Mix the ingredients together and starting with the base put in to silicone muffin or cupcake tins and leave to set in the fridge.
Once set take the out and I decorated with melted chocolate!

Another Pink Treat - Heart Shaped Pink Rice Crispies
  • Melt 4 cups of marshmallows in a pan with 3 tablespoons of butter.
  • Add 3 drops of red food colouring.
  • Add 6 cups of rice crispies & stir.
  • Press into a greased pan and cool for 2/3 minutes.
  • Flip the pan of crispies out on to a cutting board and cut out into shapes.
  • To finish I dipped one edge of each heart in melted pink chocolate melts and sprinkled with pink edible shimmer.  
Chocolate Melts!
So I bought some chocolate moulds, some flower and hearts lollies as well as baby feet and a selection of chocolate melts, bought from Hobbeycraft.
These are super easy and they were such a hit with the kiddies.
Simply melt the chocolate and pour into the moulds! We found it easiest to melt the chocolate in piping bags in the microwave so that we could get a design and use different colours.

The baby feet I did all pink and used them to decorate the cupcakes.

The ice cream cakes also went down a storm! Such a simple idea and dead easy to do.
Simply cover the outside of the cones in tin foil, add in the cake mixture and bake!
Finish with buttercream to mimic the ice cream and top off with a flake!

We even prettied up some fruit...

Using a selection of fruit, pineapple, melons and grapefruit along with my cookie cutters and cocktail sticks we made these beauties! A little bit of fun, again simple to do and look great!

Mia's dress and shrug was from BHS and headband from Next.
My Dress was Jane Norman, Loved this maxi dress as unlike most it was figure hugging and fitted lovely. It also had a crochet design on the back.
